Guest Chef Dinner: From Ocean to Ranch

Featuring Executive Chef Eric Donnelly of Rock Creek Seafoods & Spirits in Seattle, Washington and Executive Chef David Maplethorpe of The Rex in Billings, Montana

Rock Creek is Chef Eric’s favorite Montana fishing hole, and his restaurant showcases the beauty of Montana and the wonders of fly fishing. His recently opened restaurant in Seattle, Rock Creek Seafoods & Spirits, has already won acclaim as one of Seattle’s up-andcoming new restaurants. Opened in July of 2013, Rock Creek Seafood & Spirits was quickly named one of eleven “Best New Restaurants in Seattle” by Seattle Magazine and one of the “Top New Restaurants of 2013” by Urbanspoon. We are pleased to have Chef Eric join Chef David for our kick-off event of Wine & Food Festival week. Two highly skilled and talented chefs together for one event – it will be an evening of culinary wonder!

Featuring Executive Chef Nick Steen of Lone Mountain Ranch in Big Sky, Montana

Chef Nick, a Billings native and Skyview graduate, started his culinary career when he was a college student in Bozeman and worked weekends at the Yellowstone Club in Big Sky. His love of the culinary art took him to many positions at the Yellowstone Club plus stints as a private chef, working in corporate mass production kitchens, and as a food service director. His heart and soul were always in Big Sky and he is happy to now be at Lone Mountain Ranch.

Chef Jeff’s love for cooking began when he was 13. He worked with Chef Jeff Coons at AAA Five- Diamond awarded JW Marriot Scottsdale Camelback Inn & Resort; Chefs Scott Wamsley, Don Wise and Michael Diem at the Sun Valley Resort; and Chef John-Paul Gordon at the Lighthouse Bistro. Chef Jeff is currently executive chef at the Boat Club at Whitefish Lake.

Chef Mason is a graduate of the New England Culinary Institute. Gaining experience running a small French bistro in Vermont gave Chef Mason the foundation to strike out and head west. Bozeman was the destination and today he is the executive chef of that town’s first gastropub, utilizing local products and developing a strong relationship between the products and their fresh flavors.

Chef Mark attended the Culinary Institute of America in Hyde Park, New York and went on to work with some of the world’s most respected chefs: Todd English of Olives and Scott Bryant of Vertis. Before opening La Marmotte, Chef Mark was a sous chef at Jean Georges Vongrichten’s Mercer Kitchen. Chef Mark’s philosophy is simplicity – with simple, fresh ingredients he creates his contemporary cuisine.

Chef Andrew joined Sysco Montana in 2006, conducting culinary training with hundreds of Sysco customers.
