Chef Wallop comes from a 4th generation Wyoming ranching family. Raised on the family ranch in Big Horn, WY, he graduated with a degree in broadcast journalism from the University of Wyoming and began a career with Nordstrom's Department Store.
A major vocation change led him to the Western Culinary Institute in Portland, OR, where he earned a Certificate of Culinary Arts in 1993, graduating at the top of his class and earning the perfect attendance award. Matt worked in Seattle for the next four years for some of the northwest's great chefs and at some of the best restaurants such as Campagne, Il Terrazzo Carmine, Cafe Sport, Tulio Ristorante and Redhook Ale Brewery.
In January 1997, Matt moved back to Wyoming and purchased Ciao Bistro, a 29 seat restaurant in historic downtown Sheridan. Five years of growth resulted in a move to the more spacious, old D amp; D Hardware building and following extensive renovation, Oliver's Bar & Grill was opened in January 2002.
The name is a tribute to Oliver's great grandfather, Oliver Henry Wallop and his grandfather, Oliver Malcolm Wallop, both pioneers in the Sheridan community. The name is fitting as the restaurant is also pioneering as the first of its kind in the community. Oliver's serves New American cuisine and is dedicated to the highest standard in culinary practices calling on multi-ethnic traditions and the very best in seasonal ingredients and cooking techniques all delivered by a professional staff in an elegant and relaxed atmosphere.
